L’assorbimento nell’organismo delle maltodestrine dipende dalla lunghezza dei polimeri e dalla DE (destrosio equivalenza).
Più la DE è alta e minore sarà la lunghezza della catena corrispondendo in un rapido assorbimento, tipo glucosio puro.
